Why does human and computer interaction have to do anything with psychology and anthropology?

The reason Psychology and Anthropology is used because both sciences study how the human mind works and human behaviors works which are important when designing interaction between human and computer because those sciences allows UI designers to create a interface fun or easy for the User to use or follow.
